Cajun Roasted Prawn & Vegetables

Ingredients:

455 g large prawns, peeled and deveined

2 courgettes, sliced

2 yellow squash, sliced

½ bunch asparagus, cut into thirds

2 red peppers, cut into chunks

2 tbsps. olive oil

2 tbsps. Cajun Seasoning

Salt & pepper, to taste

1. Heat oven to 205 °C.

2. Combine prawns and vegetables in a large bowl. Add oil and seasoning and toss to coat.

3. Spread evenly in a large baking sheet and bake 15-20 minutes, or until vegetables are tender. Serve.
